The Freshness That Runs Through Waitaki Pinot Noir

Freshness is one of the qualities we return to most often when describing Clos Ostler Pinot Noir. It can appear in bright fruit, a lifted herbal aroma or the mouthwatering sensation that follows a sip. Together, these impressions give the wine energy.

Acidity is an important part of that experience. It helps define the shape of a wine and keeps richness lively. The impression of freshness is broader, however, because aroma, temperature and the balance of the whole wine also influence what we perceive.

Fruit with a clear outline

EOS 2023 offers a particularly vivid example. Cherry compote gives a rounded depth of fruit, with dried raspberry, bramble and rosehip around it. Roses and fresh herbs lift the perfume. What we describe as lime-like freshness brings a bright edge to those flavours.

That description refers to a sensation in the wine. It allows us to convey how the cherry character feels on the palate, with depth and brightness present together. A tasting note becomes useful when its words help another person imagine that relationship.

EOS 2024 moves into a darker register. In our early tastings, its greater complexity includes darker fruit and savoury detail, held by silky tannins and finesse. Freshness remains valuable in a wine with that breadth because it keeps the separate impressions legible.

A cool valley and a favourable slope

The Waitaki Valley provides a cool setting for Pinot Noir, while Clos Ostler’s north-facing limestone slope gives the vines an advantageous position within it. Sunlight, air movement and the behaviour of the ground all contribute to the conditions in which the fruit develops.

The wine is the outcome of that environment and the decisions made through the season and in the cellar. Freshness becomes most interesting when it is joined by sufficient flavour and texture, so that the palate feels complete from the first impression to the finish.

Energy over time

As Pinot Noir matures, its aromatic balance changes. A wine that retains freshness can carry increasingly savoury detail with clarity. Our older Caroline’s bottles provide some of the most rewarding encounters with that combination.

Freshness alone does not promise a long life. The pleasure comes from its relationship with the rest of the wine, including the depth of flavour and the quality of its tannins. In a mature bottle, those elements can make time feel like an addition to the wine’s character.

This is the kind of continuity we seek at Clos Ostler. The fruit and perfume can change with the year and with age, while the wine keeps the energy that invites another return to the glass.
