The Character of Waitaki Valley Pinot Noir
Updated: 4 days ago

Pinot Noir is the principal red variety of the Waitaki Valley. At Clos Ostler, it gives us several ways to express one limestone vineyard. The distinctions begin with the season and the fruit from individual parcels, and become clearer when the wines are tasted together.
Perfume, fruit and structure
Freshness, fragrant fruit and savoury detail are recurring points of reference in our Pinot Noir. Their balance changes from year to year. A wine may lead with rose and red berries, while another season brings darker fruit or a more prominent herbal character. Tannin gives shape to these impressions and influences how the wine moves across the palate.
Fresh acidity and fine tannin give these wines their definition. Even when the fruit is generous, the palate retains movement and clarity. The texture can be silky or chalky according to the vintage and selection, carrying the wine’s fragrance into a long finish.
Perfume and power can belong to the same Pinot Noir. EOS is selected for aromatic intensity, depth, silky texture and the capacity to develop in bottle. Its concentration is carried through fine tannin, giving the wine both presence and finesse.
Understanding the blends
Caroline’s reflects the season across all five Pinot Noir clones planted at Clos Ostler, namely 115, 667, 777, UCD6 and Abel. They are selections of the same grape variety. The fruit is harvested and fermented separately, giving us individual components to consider when composing the wine.
EOS draws principally on 667 and 777, with a small contribution from Abel. The purpose of the selection is the finished wine’s character. Caroline’s gives a broader view of the vineyard in a particular season; EOS brings a more focused expression of perfume and structure.
Our Waitaki Pinot Noir is an occasional release selected for a fresh, savoury character. Its name identifies its regional origin, while the fruit comes from the same estate. Each wine has a distinct purpose within the range.

Why the vintage matters
The 2021 Caroline’s and 2022 EOS offer useful examples of how differently the site can speak. Our notes for Caroline’s 2021 describe damson, dark cherry and dried herbs. EOS 2022 brings dried raspberry, rose petal and thyme. Those descriptions belong to particular vintages; they should not become a fixed formula for either wine.
Caroline’s and EOS from the same year hold the season in common and bring the selections into focus. Across successive Caroline’s vintages, differences in fruit, tannin, acidity and bottle development reveal another dimension of the estate.
What remains after a sip
The finish carries the wine beyond its opening fruit. Flowers, herbs and savoury detail remain as the tannins leave a fine grip across the palate. In both Caroline’s and EOS, that persistence is central to the pleasure of the wine and to our ambitions for its development in bottle.
Following the wines
A region becomes more familiar through these specific encounters. Our vintage archive gathers notes and independent reviews so that the wines can be considered across time. Together with the current releases, it provides a continuing account of this Pinot Noir site in the Waitaki Valley, North Otago.
