The Savoury Character of Waitaki Pinot Noir

Fresh herbs can make ripe fruit seem more vivid. In our recent tasting of EOS 2023, cherry compote was accompanied by roses, rosehip, bramble and dried raspberries, with a lifted herbal character and citrus freshness like a squeeze of lime. The wine felt incredibly precise. Its savoury detail belonged within that bright, fragrant expression.
This is one of the qualities we value most in Waitaki Pinot Noir. The fruit has presence, yet the impression continues beyond it. Herbs, flowers and fine tannin give the wine changing points of interest through a glass. Savoury is a useful word here because it describes a dimension that a list of fruits alone would leave out.
A herbal register within ripe fruit
In EOS 2023, the fresh herbs sit beside the richness of cherry compote. Both belong in the same description. Ripeness and herbal fragrance can coexist, just as concentration can be carried by a light, finely drawn texture. The citrus comparison records the sensation of freshness that runs through the wine.
These are estate tasting observations of a particular vintage. EOS 2024 has a darker and much more complex character, while retaining silky tannins and finesse. Following the two gives us a view of how far the expression can move within the same vineyard. The distinction matters more than assigning every bottle a fixed catalogue of flavours.
What time brings to Caroline’s
Older Caroline’s offers another register. Bottles of the 2010 opened at the estate have shown black-truffle aromas alongside continuing perfume and freshness. That developed earthiness has a different character from the lifted herbs of the younger EOS. Both can be described as savoury, but the word gathers together quite different experiences.
Caroline’s gives us the longest view of the vineyard through bottle age. Its blend brings together all five Pinot Noir clones, while EOS follows a more focused selection. Returning to earlier Caroline’s releases reveals how the season’s fruit and structure have developed, and how much aromatic life remains around the mature detail.
A place at the table
The savoury side of these wines is especially appealing with roast poultry, mushrooms and herbs. A gently browned chicken and its pan juices give ripe Pinot Noir fruit a generous setting. Mushroom dishes have a closer affinity with the earthy notes of a mature bottle. The meal leaves room for the perfume to unfold.
At Clos Ostler, that combination of fruit, savoury detail and freshness is part of the attraction of our North Otago slope. It gives the wines an intimacy that becomes clearer with time, whether over an evening or through years in the cellar. The lasting impression is often a small aromatic detail returning after the fruit, held in place by fine texture and lively acidity.
